AIP friendly birthday cookies

After scrolling through ideas for a birthday desserts for my little one she chose these, which I adapted from Beyond the Bite. Enjoy!


3/4 cup tigernut
3/4 cup arrowroot flour
1 tbsp grass fed gelatin
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp sea salt
1/4 cup lard
1/4 cup coconut oil
1/4 cup brown rice syrup
1 tsp vanilla extract
1/2 cup Lily’s Stevia sweetened chocolate chips or raisins
1T cacao (optional, not AIP)

Stir all dry ingredients (Tigernut, arrowroot, baking soda, gelatin, cinnamon and sea salt) together.
In a food processor, blend all wet ingredients (syrup, lard and oil, and vanilla) until combined.
Add in dry ingredients to the wet and blend until a sticky cookie dough has formed.
Pour batter back into mixing bowl. Stir in chocolate chips or raisins.
Cool batter in the freezer for 8 minutes or in the fridge for 30 minutes.
Preheat oven to 350 degrees.
Form Into small balls with your hands (about 1/8c) and press down onto lined baking sheet. Bake for about 12-14 minutes, or until firm and golden around the edges.
Remove and let sit for 10-15 minutes. Transfer onto a wire rack until cool.
