1 cup rice flour
1/8 cup sorghum flour
1/8 cup arrowroot powder
1/4 cup tapioca starch or cassava flou
1/4 tsp baking powder
2 tsp guar gum
pinch of salt
1/2 cup cocoa powder
1/2 cup + 2 Tbls coconut milk (canned, full fat, mixed)
1/2 cup coconut oil
1/4 tsp green stevia herb +10 drops stevia liquid (this is what I did, but you may just do one or the other. I tasted my batter prior to putting in the oven to make sure it would be sweet enough)
1 cup brown rice syrup
1/4 tsp vanilla
1 Tbls hemp seeds (optional)
2 pitted dates (optional, I used for extra sweetener. Omit if wanting fructose free)
Mix all of the dry ingredients in a medium size bowl.
I used solid coconut oil, so I threw all of the liquid ingredients in the blender, plus to add more protein, I put the hemp seeds in, also, to incorporate them in.
Mix with the dry ingredients.
Line an 8×8 baking dish and cook in the oven for 30 minutes (for gooey brownies you can shorten the cooking time by 3-4 minutes). Check consistancy by inserting a butter knife into the middle of the brownies to make sure they’re just right for you.
When they reach the desired texture, take out of oven and let sit for a minute before transfering the whole parchment paper and brownines to a cooling rack.
