This is justly named, because I have wrapped meat loaf with bacon which definitely feeds a persons soul (sorry for any vegans…) and heart because I included beef heart in the recipe. Don’t worry! It tastes amazing! My husband couldn’t even tell! I did tell him after the fact 🙂 If you’d rather live less “dangerously” then you can just use an extra pound of burger. Enjoy! Why you should eat heart and other organ meats.
1 pound of grass-fed organic beef
1 beef heart, grass-fed,organic – cleaned and chopped
1 package of nitrate free bacon, organic, free range
1 medium onion
1 bunch of cilantro
1-3 cloves of garlic
1-3tsp (or to taste) Himalayan salt
After cleaning and chopping the beef heart, add to food processor along with onion, cilantro, garlic, salt and sage. Process until fine texture. Combine this mixture with ground beef until well incorporated.
Preheat oven to 350 degrees.
Line a loaf pan (glass if possible) with strips of bacon up to the ridge of pan. Stuff ground meat mixture into lined loaf pan. Add small amount of water to pan and bake for about 1.5 hours or until a meat thermometer reads 160 degrees in the middle of loaf. Top with remaining bacon strips and bake until crispy.
Once the meat has cooled there will be a layer of congealed broth. Don’t throw this out! It’s super delicious and good for you too. Would make an excellent gravy or broth.
